Recipe : Cheesy Zucchini Bake

We could eat cheese with everything. The one thing that I love about the low carb diet, is that we’re allowed to eat cheese. I don’t think I could make a long term lifestyle change that cut out dairy. With that being said, we put cheese in at least one meal a day. We can’t help it. This cheesy, easy zucchini bake is no exception.

Recipe : Cheesy Zucchini Bake

This dish is perfect for the cheese lover in your family. It’s creamy, cheesy, and the garlic helps add a pop of flavor. We’ve recently highlighted a lot of dishes that make you want to eat your vegetables and this baked dish is simple and serves that purpose.

With only 4 main ingredients, you can whip it up with what you may already have in your kitchen. Let’s get started!

This easy zucchini bake is perfect for busy nights. With only a a few ingredients, you can wow your family with the perfect side dish.


  • 4 zucchini
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • salt and pepper
  • 3 tbsp heavy cream
  • 1/3 cup cheddar cheese split in half
  • 1/3 cup mozzarella cheese split in half
  • 1/4 cup parmesan cheese grated (optional)


  • Preheat your oven to 375.
  • Slice your zucchini into thin slices.
  • Toss in a bowl with salt, pepper, garlic powder and olive oil.
  • Lightly grease a casserole dish. Spread out zucchini slices into the casserole dish.
  • Bake for twenty minutes. At ten minutes through, stir.
  • If there is any water in the dish, drain/pat it out.
  • Add heavy cream and half of your cheese. Stir.
  • Put back into the oven for ten minutes.
  • Top with the rest of your cheese and put back into the oven for 5-10 minutes, or until the cheese is melted.
  • Enjoy!
